Oh delicious, I made the three bean minestrone soup from my Yellow Team and it was AWESOME!!!!! If you have a minestrone lover, they will be very happy with this recipe! I changed around the amounts of veggies (more for the ones I really like) and added some peas and it was absolutely fantastic! I recommend this one for sure! 10 out of 10 from me and my boyfriend!

Hope everyone is doing well!!

Good Sunday Morning BLACK PORSCHE'S

AWESOME dedication everyone! Week 1 is behind us - I expect we may have been *overtaken* by some teams BUT this is a NEW week...Time to KICK it up a notch and show everyone that the PORSCHE is NOT a car (team) that will be left behind. So, a CHALLENGE to all teammates....For this week, if you've fallen behind on your exercise, try to add a few minutes each day - on your lunch break, walk for a few minutes, if you're going to the gym, add a new exercise, if you're driving, tighten up your abs for a count of 10....relax and do it again...
at your desk, do the same, and remember to stretch out those muscles....Commit to doing a food diary here - if you aren't already - it's sooooo much easier to monitor caloric intake and see where you might be able to cut some fat grams or choose *better* carbs and more lean protiens....Best of all, we're ALL a team here...ALL fighting the same battle,
and you gotta MOVE IT - TO LOSE IT....!
RACE....RACE HARD....and we will all be well rewarded at next weigh in....KICK IT INTO HIGH GEAR!
HAMMER DOWN and no lookin back!!!! Crew Chief Deb

Week 1's results have not been posted just yet. It takes a bit of time to get them all organized before we can get them up and on the board. I hope to have this done sometime today though... keep burning rubber and watching for results!!!

I had a White Corvette recipe by CherBru - Broccoli Casserole (p19) for breakfast since the ingredients sounded more like a quiche.

Ingredients:
6 large eggs
4 oz light margarine
1/2 lb lowfat cheddar cheese
6 Tbsp flour (whole wheat, soy, or other healthy substitute)
2 lb non fat cottage cheese
10 oz frozen, chopped broccoli (thawed)
1 tsp salt
1 dash black pepper
1 dash paprika (optional)
4 oz jar chopped pimento (optional)
1/2 cup sliced mushrooms, fresh or canned (optional)

I used Smart Balance margarine, fat free cheddar, no flour, and no pimento's. As suspected, this casserole was more like a quiche. It smelled wonderful while cooking and tasted really good. If I had it to do over again, I would probably use lowfat cheddar cheese mixed with the fat free and I might have put it in a bigger pan so it wouldn't have been so thick in the middle.

ANOTHER RED FERRARIS REVIEW OF THE RED FERRARIS SHRIMP SCAMPI:

I made my own Shrimp Scampi last night. I hadn't made it in over 5 years since the last time I was on Weight Watchers! I followed everything in the recipe and also added a good hit of red pepper flakes to give it some zip (hubby said I could have added even more!). We pigged out and finished off the whole dish. It was yummy and I definitely recommend adding the red pepper flakes!

I really appreciate all the thank yous and recognition for having put the recipe index together! But I just wanted to say that the little bit of effort it took to compile that list pales in comparison to all the work ImLuuvd has been putting into this race. She deserves the spotlight!

Two last reviews from me:

I tried my team's French Dressing, which I thought was tangy and different and a nice change from Ranch. I will definitely make again.

I also made the Yellow Lamborghinis Ricotta Cheese Snack, which I thought was great! I vowed never to eat ricotta again after trying the ricotta desserts out of the SBD book -yuk! But this was wonderful-definitely satisfying a sweet tooth! I will definitely make again with other flavors.

Here's more recipe reviews for the White Corvette's team:

Red Ferrari's - Italian Stuffed Peppers. I made it this morning so we can have it for supper tonight when I get home from golf. I went ahead and took a sample bite before I put it in the frig. Yummy! I know my hubby will love it since this is one of his favorite dishes. I used lean hamburger instead of turkey though. I cooked the meat first, drained it and rinsed with water and then mixed it with egg and the veggies. Still turned out good.

White Corvette's - American Beef Burgers I made these for my husband and me just a few minutes ago. He's been on the golf course since 8:30 am and I'm joining him at 1:00 for at least 9 holes. I told him I would bring him a sandwich but decided to bring him a burger instead. I put 1 slice of FF american cheese on mine, cut up a tomato, and a large pickle for my lunch. The only change I made to the recipe was adding milled flax seed instead of bread crumbs. Nothing beats a good American burger for lunch!

It's supposed to be 69 today and 78 by Tuesday in Georgia! Good weather for getting some exercise outside.Cool

ANOTHER RED FERRARIS REVIEW FOR RED FERRARIS PASTA BOLOGNESE:

I cooked this up this afternoon to let it simmer (I like to simmer my sauce even thought the recipe didn't call for it). I substituted fresh garlic for the garlic powder and omitted the cheese and mushrooms (we like to add the cheese individually and my daughter won't eat mushrooms). My husband and I did a taste test and it is definitely 4 thumbs up! I wanted to try this recipe because the idea of adding a gravy mix to the sauce intrigued my tastebuds having never done this with a spaghetti sauce before. I also was adventurous and added the worchestershire sauce. I would definitely make this again!

I am running out to the store right now to pick up some ricotta cheese in hopes of making the ricotta cheese treat before the deadline!!!Bad Grin

I'm glad you enjoyed Evelyn. Very Happy This was my homemade version of Pasta Bolognese that I made up myself... lol, us British do strange things with gravy!! Laughing Ooh, the cheddar cheese is just to sprinkle over the top after you've dished up, so it just melts in - but you could also use something like parmesan or mozzerella. I've also made this substituting the beef mince with turkey mince in the past. I think you call our minced beef... ground beef in the US though don't you? Laughing ... I keep having fun trying to find these things in the food database.

This one is also in my cookbook if you haven't already booked marked.

ANOTHER RED FERRARIS REVIEW OF THE YELLOW LAMBORGHINIS' RICOTTA CHEESE SNACK:

I made it out to the store today and bought a tub of light ricotta cheese to make this dessert (we don't seem to have fat free ricotta here!). I used the chocolate pudding and added some almond flavoring. The original outcome was very tasty but was a bit too thick and rich for what I wanted. So I added one more cup of milk which, of course, diluted the flavor a bit so I added about 1/4 cup of Swiss Miss sugar free hot chocolate mix and a little extra sweetener. It turned out just right. I am going to serve this for dessert tonight with some fresh strawberries! Yum, yum! Very Happy

Ok this is another review for the red team. I tried Chants recipe for omlettes on the white team. To be truthful I will not being making this recipe again. I have never used tarragon or majoram before but the recipe made my eggs very sweet . The spices alone are sweet spices but together it is even sweeter. I modified the recipe: 4 egg whites, 2TBS of parmensan cheese, 1 tsp tarragon, 1 tsp marjoram, 2oz milk, SB candian ham and 1 TBS of FF shredded cheese chedder cheese. I have an omlette maker so they came out beautifully but well my son drowned his in salsa.... Thanks for trying Chants

Good Afternoon. Had to get the two receipes in that I have tried. For lunch I had a tossed salad with the French Dressing from the Blue Bugattis team. Also after lunch I made the French Dessert with the apples also sent in from the Blue Bugattis. I have to rate the both very good. I would make both of them again. Hope this helps us BLACK PORSCHES. GO TEAM. LETS ROLL.
