Jicama (Interior color)

Over the last 8 weeks I have cut open and julieened at least 3 jicamas. All were close to white inside. They make great snacks. They do taste earthy.
The last one was streaked with brown. It almost looked like the earth it grew in was mixed into the interior.
I am not sure if this was normal coloring or perhaps some kind of over ripeness. I ate a few pieces and they tasted about the same and I didn't get sick.

Any feed back????

Ok i have seen many people refer to jicamas and i have no clue what it is? Also is it Atkins friendly?

i don't know about the colors of jicama but sleclerc it is a mexican yam. it is on the list of veggies for induction.

i wanna try some soon since i heard of people using it for hash browns and other potato dishes.

Jicama is AWESOME cut up into a healthy soft taco with chicken, beans, low fat cheese, and black beans and diced tomato! It really gives it some extra crunch. It has the texture of a Granny Smith apple IMO. I've only ever seen it be white so I can't respond to the post. But hey, if it didn't make you sick it's probably cool.

I loooove jicama! chris,I also think it resembles an apple. i sauteed some in butter and my hubby and I both liked it. Next time I'm adding a little splenda and cinnamon.

Waynesworld, I eat jicama very ofte (very popular in Mexico). Being an unexpensive and easy to get piece of fruit, I would rather discard it if a see a color different than white. My advice would be to pass on that piece and get another one.

By the way, mixed with some cucumber, carrots sticks, lime juice, salt, and chili powder makes a fabulous afternoon snack. (watch out for sodium though).

Wayne, I purchase jicama all the time too- It should be white inside. One thing I have noticed the last few weeks the quality at the store has been pretty lousy-I wonder if we are buying the ones that were harvested last year...like with apples.
