CSA Box puzzle of the week -- what would you make?

My CSA box for the week contained the following:

6 satsuma mandarin oranges
3 fuji apples
2 meyer lemons
1 bunch celery
1 bunch carrots
1 lb baby bok choy
1 bunch spinach
1 bunch kale

I'm trying to puzzle out how to combine this stuff into healthy lunches for the week, plus at least parts of dinners. I also have a butternut squash or two at home, and I can buy anything I feel like adding to the mix. My only dietary restrictions are that I don't eat artificial sweeteners or factory-made foods. I'm cooking only for myself.

I'm thinking maybe some sort of soup for the carrots and celery and kale, but I'm not sure. Oranges make good snacks. Apples could combine with the butternut squash for a soup or a side dish, or be made into desserts.

If you had this box of goodies in front of you, what would you make?

Actually, someone just mentioned kale chips. That sounds like a good idea!

I think I'll make a nice chicken noodle soup with the carrots, celery, and spinach.

You could make a quinoa (or rice) and kale pilaf type thing, which would probably pack well for lunches? A quick Google search brought up this recipe, which I'm sure you could modify and make to your liking. http://www.goodlifeeats.com/2012/11/butternut-squash-and-kale-quinoa-stuffing.html

As soon as I see bok choy, I think stir fry. Something like chicken pad thai. Except I would skip the rice noodles, as much as I love them. You could save some of the carrot or celery add a protein of choice and delicious.

mandarin oranges could be used to serve with chicken or in salad,
Apples with pork, spinach with even baked omelet, kale for warm salad to serve with ham, all the other vegetables could be used to make stir-fry with any type of meat or sea food you like. Have fun

The carrots, spinach, and some of the celery went into chicken noodle soup. I suspect that the rest of the celery will go to waste... I'm not a huge fan. Either that, or I'll chop it up and freeze it for the next time I make stock.

The baby bok choy got roasted, and served with a meyer lemon sauce.

The kale is now curried kale chips, and I'm munching on them as I type this-- I could eat the whole batch in one sitting!

I gave away some of the oranges and ate some of them. The apples are still in the refrigerator, but they'll probably be apple crisp.
