I'm firmly of the mind that a healthy diet involves lots of food that comes out of the ground, and not so much that comes out of packages and factories. I'm a big fan of trying new things, and I want to write about them here in order to encourage others to do the same thing.
I bought a fresh jicama the other day. I've eaten lots of jicama before, but I've never worked with it until now.
Jicama has a mildly sweet, slightly nutty flavor. The flesh is white and very crunchy, which makes it good in salads, slaws, and the like. It's also very low in calories-- one cup is around 50 cal-- and has lots of fiber. To work with jicama, slice off the pointy ends then peel the outer skin off. After that, you can slice it, chop it, julienne it, or do whatever you want.
I made a salad out of chopped jicama, corn, tomatoes, jalapenos, and cilantro, and dressed it with lime juice and a little bit of olive oil. The result is tasty, filling, and very low-calorie-- a huge serving of the salad is about 100 calories. It's tasty and filling.

I love it. One one my absolute favourites. I usually eat it raw. It is may favourite snack.
I sometimes add it to salads.
And I julienne it for thai salads (with chinese cabbage, daikon and mung beans or what ever I have)

Jicama is one of my favorite snacks, a great way to make jicama is to shred or cut into very small pieces and dress with chili powder, fresh lime, some salt and some queso fresco. Delicious low calorie snack.

Love it. Ditto on the raw, tossed on a salad with a vinaigrette. Kinda tastes like a very mild pear to me...
