Are you car camping, or hiking camping? If you're hiking camping -- don't worry about the food you'll eat. You will need the calories and I've never seen hikers ever pack too much to eat.
If you are car camping offer to buy the food and cook for the whole gang. That way you can be in control of the food that's purchased. That's what I do. And I don't skimp on the cost. I bring the receipt with me and tell everyone they owe me their share of the food. Plus, I've had people tell me that they love the food that I cooked better than what they normally eat -- hot dogs/hamburgers, etc.
Here's stuff that I take on my car camping trips:
Skewered shrimp or any kind of kebab
marinated chicken breast (add the marinade and then freeze so it stays fresher longer)
all kinds of delicious grilled veggies (sea salt & olive oil)
Grapes, cherries, grape tomatoes, strawberries
artichokes with a mustard dip
Low fat bratwurst (I like them better than hotdogs)
