Is MIMs acceptable on Induction?Question

Yes, I had one everyday when I was on Induction before. Of course - this is my 2nd round with Atkins, because I didn't follow the plan through all the Phases, and gained some weight back. But this time, I'm in it to the end. So, enjoy your muffins!!!!

Pumpkin Muffin-in-a-Minute (IF)
Author: Kent Altena
Recipe Type: Snack
Prep Time: 1 min Cook Time: 5 mins Total Time: 6 mins
Serves: 2

Great Induction Friendly snack – very popular with the Atkins Diet Facebook site
Ingredients
1 oz cream cheese
¼ cup flax meal
¼ cup pumpkin
1 egg
½ tsp Cinnamon
2 tsp Splenda
½ tsp baking powder (optional)
Nutrition Information per serving
175 Calories, 13.5g Fat, 8g Total Carbs (4.5g Fiber), 7g Protein
Instructions
Soften cream cheese in microwave. (10-15 seconds)
Add remaining ingredients to bowl, and mix well.
Microwave for 2.5 to 3 minutes until the center is cooked.
Serve warm.
Nutrition Information
Serving Size: 1 Calories: 175 Fat (g): 13.5 Carbohydrates (g): 8 Fiber (g): 4.5 Protein (g): 7

Thanks for the recipe. I sometimes have the normal one. I have never tried in with pumkpin like that (my husband is complaining about the frozen pumpkin I still have around) I will give this a go

The Pumpkin ones are quite tasty too. I make them every now and again as a little variety for me. And like RedEarthFlame says, they are so good, it feels like cheating.
** Goal 1- 20 pounds- 4/30/2013
** Goal 2- get back down to wearing size 16 jeans
** Goal 3- normal blood pressure
** Goal 4- well below "One" Derland
** Goal 5- 600 miles this year in 200 mile increments
** Goal 6- Decreased back and knee pain

Pumpkin! That sounds SO much tastier than the one I tasted. Is it possible to use xylitol instead of Splenda?
