HELP!! I dont know what to eat for dinner tonite!!! I need to keep in around 5 carbs. Any ideas or suggestions? I was thinking tuna or egg salad but not sure. HELP

Tuna is always a hit in my house. I like it mixed with mayo and add a little chopped dill pickle, then wrapped in lettuce leaves. My daughter likes to just eat it by the spoonful. We also love to have breakfast for dinner- scrambled eggs and sausage or bacon mmmmm...

I LOVE a good BLT. Drop a tsp of mayo onto a romaine or other lettuce leaf, a couple pieces of crispy cooked bacon with a slice of tomato (sometimes I even add a little cheese). Roll up the lettuce and yum. I usually eat 2 and the carbs are minimal.

Any of those are great ideas! If you can get good lettuce leaves you can make any sandwich and wrap it in lettuce.

I buy a rotisserie chicken, pull the meat off the bone and mix it with a TINY bit of mayo, some lemon juice, chopped celery, onion, some boiled egg if I have one and salt and pepper. Serve on an endive leaf with crumbled ready bacon and shredded cheddar cheese.

I call them chicken boats and my kids love them! (Me too!)

I buy a rotisserie chicken every week. I make alot of chicken dishes but having one pulled in the fridge can be the difference between a balance meal and pb&j for the kids on a busy night.
