Does anyone ever eat a lot of there veggies in the morning? I'm not talking about than that spinach or tomato you throw in an omelet. I'm really considering trying to eat salad for breakfast to make sure I get all my veggies in for the day, any thoughts on "breakfast salad recipes"?
Just wanted some input...

Yum! How about salads that include some fruit. But you still need some protein for breakfast too. I am not great with recipes I tend to though whatever together.

It's your diet. Eat what you like. I would imagine that any salad you would eat for lunch or dinner would be fine for breakfast if that's what you prefer.

Yes I know its my diet and I can do whatever, I was just trying to get different ideas for salads or veggies that seem more "morning" appropriate. I'm not wanting to eat a ceaser salad for breakfast...

I don't usually go for a salad, but I do eat a lot of green smoothies for breakfast. I blend up spinach, lettuce mix and a mix of fruit in bulk whenever I have the time and freeze it. Then all I have to in the morning is thaw out a container and go. Along side a glass of milk (almond, hemp or whatever your fancy) and a piece of fruit, it's plenty enough to keep me satisfied until lunch time.

Have you considered doing a veggie based smoothie for breakfast? I don't know any recipes, but I'm sure you could find some by doing a google search. Here's a website I found pretty quick

I've eaten regular salad for breakfast. It's alright. I've also been pressed for time and just eaten a can of green beans for breakfast...more than once. I think stir-fried zucchini/squash/onions would be a fine breakfast with a side of toast. Also, mashed squash (or canned pumpkin) with brown sugar, or even mixed into pancake batter or with oatmeal is good.

You could try making a crustless quiche, then you could put all the veggies you want in it and still have the protein from the eggs.
I have seen recipes for breakfast zucchine hash and looked like it was alot of veggies. I dont know where I saw the recipe, so you may have to google or pinterest it.
I personally saute spinach and mushrooms (and I mean 2 big handfuls of spinach and 2 or 3 mushrooms, sometime some bell pepper too) Throw in an egg, and serve on whole wheat toast with avocado and half a tomato. Its usually piled high enough that I have to eat it with a fork and knife. Then add fruit and/or berries on the side.

I put broccoli and spaghetti squash in my omelettes. Fresh of course. I put scallops sometimes. Salmon and eggs are also fantastic.
My philosophy is, anything is breakfast if you put an egg with it.

you can also consider a breakfast wrap. I do it for my kids in the morning. Put your fav veggies in a wheat or low carb wrap, I like to add a scramble egg also. Its quick and easy.

I prefer lots of vegetables in my omelets. Tomatoes, mushrooms, peppers, spinach, squash and zuccinni. Then top it off with a little chicken or turkey. It's really great and helps me get my veggies and protein for the day.

I usually chop vegetables like tomatoes, bell peppers, green peppers, cucumbers (my favourite, I could eat cucumbers for every meal) or something similar. The more the better. Then I put in tuna or salmon (canned in water) and season with mustard or tabasco. Sometimes I add egg whites or cayenne pepper, I'm really into spicy food. You can also add chicken breast or tofu. But I'm really a vegetable loving person so that works for me.

Big Fan of Green Smoothies and just started juicing. One of the 2 is my 1st meal of the day. Breaking nightly fast with Fruits and vegetables just made complete sense to me. Seems to me that ur body would absorb the nutrients best on an empty stomach. And juicing is better than Starbucks coffee for energy!

Green smoothies are quick, easy, and satisfying. Consider adding a scoopful of protein powder to the mix. There are several on the market that are very low in sugar...try a nutrition store. The one I use has 1g of fat, 0g of sugar, and 34g of protein.

Even though fat doesn't count in Atkins, it can cause you to gain or not lose weight if you consume too much. Be careful of over eating this nutrient. ie: cream, cream cheese.
