I need help too, just hit the grocery store a day or two ago. I was looking for soup recipes, something broth based full of veggies, maybe chicken. I think I'm just going to wing it and toss some stuff in a pot. Smile try the recipe link, I was just looking there but my attention span is too short. Laughing

as far as your post, sorry I just hijacked it. Maybe some sort of hearty casserole? chicken, veggies, cheese? or pound the breasts out flat, layer with some neufchatel cheese (sp?) its like cream cheese but better for you and whatever you like, I usually do something like spinach, broccoli, or asparagus, onion, bell pepper etc roll them up then bake til juicy and tender!

I made chicken breast yesterday that were awesome. I sauteed them in strips in olive oil, with about 1/2 cup of mushrooms. added 2T of fresh minced garlic, 2 bay leaves, cooked them in 1 cup of chicken broth and 1/8 cup of balsamic vinegar for about 15 minutes. Added 3T heavy cream just before serving. It was delicious!
I am on Atkins Diet so it was perfect. If you are on another diet, you could probably cut the fat by using milk in place of cream. It tasted like a restaurant dish! Took the leftovers to work and put them on top of a salad (without the sauce.) **The original recipe called for adding corn starch to thicken the sauce but I didn't want the carbs.

Mmm, I'm having whole grain pasta with pesto, onion, bell pepper, garlic, and tomato. I'm sure it'd be great to top with chicken, if you aren't on a low carb diet.

That's the best when they don't even know they are eating your diet food. My husband never wants it if he thinks it is low carb! lol

I've made this recipe several times and it's fantastic. I sub chicken breasts instead of thighs.
