DAY Two. cold outside and craving soup, any one got any low carb soup ideas to share?

I take a rotisserie chicken from the market, strip the meat (discard bones and skin and fat) and cube it. Add a can of salsa, a box of (or homemade!) chicken broth, 2 cups of water, the juice from a lime, salt and pepper. I put in a can of black beans, but if you're doing low-carb you can skip it. Everything is cooked, so just warm it up and let the flavors meld a bit. Fast and delicious. I serve it with a fresh salad.

I use the rotiserie chickens too! I buy one every week and strip it to have in the fridge when I have no time. Make quesidillas using low carb tortillas, top salad, chicken salad and lettuce wraps and on and on. Yes it is better to cook my own chicken but I have little time so it's a great backup when time is short. Great for the kids on busy nights as well.
For a quick low carb soup...I take a cup of college inn ff and low sodium broth, add some chopped carrots and celery (buy the ready to go stuff too) and once the carrots are al dente I add in some dice chicken and warm through. Using 3 oz of chicken (mixed white and dark) and a 1/4 cup veggies comes to 215 cals, 24g protein and 1.7 net carbs and is very filling. Of course it's even healthier to use cooked chicken breast. When I think ahead I make up about 4 servings using a couple large chicken breasts. Then you can play with it once out of induction. I'll add spinach, beans, etc...

I never thought of egg drop soup !! what a great idea. I ended up on cabbage and sausage soup minus the potato I usually add just bc I have all the ingredients. Going to go with the rotisserie chicken tomorrow. There is enough left over for dinner with a side salad. Can wait. !!

I personally like the boring broth soup with cheese and pickle on the side. Had it for lunch today as a matter of fact.

HDP, that sounds super good, hadnt thought of that yet. We are gonna finish off the left overs of the soup I made for lunch with a HUGE salad.

I'm going to try this one tonight: Mexican Style Soup

Also, I really like this one from Linda's Low Carb site: Texas Chili I know it says "chili" but it's more of a tomato broth base than a thick chili.

And: "Split Pea" Soup (It's bizarre in that instead of split peas it's made with frozen cauliflower and green beans but you really can't taste the difference!)

for the past few weeks I have been making brocoli & cauliflower soup.

Just boil a heap of brocoli, cauliflower and garlic.
Once soft blend it all up.
Then I taste test it and add herbs and spices to taste. I always add heaps of chilli because I love it and it's so great for weight loss
Start weight 20/04/2013 = 240kg Goal weight 120kg (total loss 120kg)

It won't happen over night, but if you don't give up it WILL happen.
