I'm so excited to announce what I discovered today -- Miracle Noodles!
They have Angel Hair Pasta, Fettuccini, Miracle Rice, and Garlic and Herb Fettuccini and a lot more!
Now I will never need to count my net carbs when I have some of those carb-craving days!
You can also try Julian Bread/Cookies which have almost Zero-net carb.

In my office today we will be ordering 60 bags of shirataki noodles today (had to wait until we were paid).
Also try Konnyaku blocks (same stuff just as a block instead of shaped) if you can find them. They absorb flavour like a sponge and if you are okay with the texture (which is a little odd I have to admit) they bulk out stews and things wonderfully.

These are not exactly the same thing, but I buy House Foods Shirataki Tofu Noodles and the preparation is important to get the right texture and smell to be a great noodle replacement. Here are the steps and a few good recipes for both types:

Also, quoted from that page, "Doppelganger Alert! Miracle Noodles - This shirataki-only noodle product is not the same thing! Sure, it's practically calorie-free... but we don't like the texture quite as much as today's tofu-added honoree." So if you aren't crazy about the Miracle Noodles, give these a try!

There's a youtube video on making apple kugel with miracle noodles, I'm about to bake mine, it looks delicious. I add MN to my spinach soup (sauteed onion with no oil, garlic, frozen chopped spinach, sea salt, ume vinegar, garlic wine vinegar, splash of tamari, then blended with immersion blender). It was so delicious and filling, nothing and I mean NOTHING could tempt me after eating that. I also made a satisfying tomato soup when I found some of my tomatoes going soft. I peeled them, diced and added minced garlic, sea salt, ume (plum)vinegar, garlic wine vinegar, cayenne pepper. Cooked for about 10 minutes on low flame, hand-blended, added some basil, parsley, dill, cilantro (any herbs add flavor). I used some MN in the soup. It was divine - again soooo filling and satisfying. I'm going to "soup" some asparagus today with my tilapia (marinated in lemon, ume vinegar, g.w.vinegar, tamari then I crush a grissini breadstick that I'm allowed mix it with garlic powder and some sea salt and bread my fish. I put it in the toaster oven for 10 minutes or so on 350 and it hits the spot! What a good feeling to make simple, tasty, and filling meals for oneself and then enjoy the day. There's no hunger or obsessing with food when you plan your food for the day. I find more time to do the things I want, then when I don't "waste" time with my own food needs. Again the old adage "when we fail to plan, we plan to fail" I hope I remember this solidly when I reach my goal, especially during the extra stressful times of the year.

I got my miracle noodles today! They were certainly different than regular pasta but here is what I did with them. I sauteed some celery, a little onion and a sliced mushroom in some butter, sauteed the noodles in and added baby shrimp. It made for a wonderful, filling meal and I loved that they were essentially no calories. I don't think they are for every pasta substitute but for stir fry dishes like this they are fabulous. I found them for a fairly good price. I got 4 packages of angel hair for $10 and free shipping.

I've got four packages of the "fettuccine" in the pantry and have been a huge chicken to try them. Do you think they'd work for a Pad Thai dish? I'd really like some Pad Thai - not for the "carbs" but just because I love the combination of flavors and textures. Would the angel hair work for thai roast pork w/rice noodles recipe? I miss all the flavors of thai foods since going low carb.

Earlier this week I made a spinach and turkey bake over Miracle Noodle Rice. The texture reminded me of tapioca (good thing I like tapioca) and they pretty much absorbed the flavor of the cheesy sauce that was in there. This weekend I am going to attempt to make vietnamese pho with my Miracle noodles. I bought 12 bags with free shipping straight from the manufacturer and I am so glad I did. LOVE LOVE LOVE THEM.
Alot of people said they couldnt get past the smell. Honestly, I was so prepared to be smacked in the face with this disgusting smell, but only found that it really just reminded me of soy milk when I opened them. I ran them under hot water for 2 minutes, then onto the stove and boiled them for 1.5 minutes. Smell was gone and they were delish.
YAY!!!! I may even do a low carb pad thai this week! They would be perfect for it Darlene!

I'm not nearly as thrilled about the Miracle Noodles as I am about the BREAD I'm ordering through Julian Bakery. Holy moly. Induction-friendly 0-2 NetCarb breads depending on which kind you choose. I have heard raves about this, and I'll be trying the breads first before moving on to their cookies.

Mamajava - I've got some of their cookies and vanilla muffins in the freezer. The muffins are very crumbly and I haven't tried the cookies yet but my son liked them. The low-carb bread is pretty good for not being regular bread. The no-carb bread was totally weird and I'm not sure what I'm going to do with it yet because I can't just eat it. The texture is very dense. I do like the amazing sourdough which is 4g per slice so don't eat it often. But - I plan on have a half blt sometime while the tomatoes are ripe and it will be well worth it.

I did a lot of research on miracle noodles and decided it wasn't for me since it's best with asian dishes. For noodles I use spaghetti squash which I prefer.
I haven't tried too many low carb products, especially breads. Has anyone tried Carb Krunchers? I've wondered about their products.

I grew up with shirataki in various forms, but back then it wasn't called Miracle Noodles. We often had them in sukiyaki in the noodle form. In the block form it was cooked in dashi and seasoning.
Even though I was raised with it, I too was reluctant to try it in pasta dishes. Actually, I thought I sounded gross in an Italian dish.
However recently I've adapted a spicy shrimp scampi and spinach dish, and it's become my go-to meal whenever I'm especially hungry (even tastier the second day). Shirataki fettuccine alfredo (using Laughing Cow) weighs in at 99 calories a serving and is a treat as well.
But it's not always about calories. Being a diabetic, it's a satisfying substitute and keeps my blood sugar in check.

Even though fat doesn't count in Atkins, it can cause you to gain or not lose weight if you consume too much. Be careful of over eating this nutrient. ie: cream, cream cheese.
