Did my stretches morning and tonight. My leg still are a little sore walking up and down steps but not as bad as the first day! WAY TO GO [b]Yellow Lamborghini’s[/b]!!!! Your All doing such a great job! Keep up the good work!

I made the [b]Ricotta Cheese Treat-Snack [/b]and it is SO much better than the Ricotta Cheese recipe in the SB cook book. It tastes just like pudding and a little does go a long way. I know when I am looking for something sweet this will be the first thing I grab! I would give this a solid [b]9[/b]!

I had the Pasta Fagioli (with a twist)tonight for dinner. The whole time I was making it, I kept thinking Kidney Beans? I am very happy to report [b]I LOVE THIS DISH[/b]! I made it with zucchini noodles and it was just great. I will be making more of this and putting it into single serving dishes and frezzing it for future lunches! Yummy Yummy:d

Party Italian Wedding Soup INGREDIENTS 1 (48 fluid ounce) can chicken broth 1 (10 ounce) package frozen chopped spinach, thawed and drained 2 onions, chopped 2 cups chopped carrot 2 stalks celery, chopped 1 pound ground beef 1 cup dry bread crumbs 1 egg 1 pound skinless, boneless chicken breast halves - cut into chunks 3 ounces dry pasta salt and pepper to taste DIRECTIONS In a large pot over medium heat, combine the chicken broth, spinach, onions, carrots and celery. Mix well and allow to simmer. In a separate large bowl, combine the ground beef, bread crumbs and egg and mix well. Form mixture into 1/2 inch diameter meatballs and carefully drop them into the soup. Put chunks of chicken breast into the soup and reduce heat to low. Allow the soup to simmer for 1 hour. Add the pasta 30 minutes before serving and season with salt and pepper to taste.

Heart-Healthy Cranberry and Pistachio Biscottis Ingredients 1 roll of parchment paper (or butter paper) 2 egg whites only(not the yolk as that is what contains all the fat) 1/2 cup sugar (or sweeteners if you are diabetic) 1/2 cup all-purpose flour 1/2 cup wheat flour 2 tsp baking powder 1 tbsp olive oil 4 tbsp milk 1/3 cup shelled pistachios - sliced a fistful of dried cranberries 1/2 tspn vanilla essence Note: This is a healthy version of the recipe, so you might have to compromise on the softness a bit. If you are looking for a cake-like richness in the biscottis, use whole eggs(with the yolk) and instead of olive oil, add 1/4th cup butter Method Preheat oven to 350°F and line a baking tray with parchment paper.In a large bowl beat egg whites with a pinch of salt until they just hold stiff peaks. Gradually beat in the sugar while constantly mixing it. Sift both the flours and baking powder. Add this to the egg white mixture and whisk. Blend in the olive oil, milk, nuts and cranberries and beat till stiff peaks are formed and mixture holds its shape. Finally fold in the vanilla gently. Transfer the mixture into loaf pan baking sheet forming a log-shaped bar with the dough. Smooth the top with hands and a flat butcher's knife and bake in middle rack of the oven until golden, about 25 to 30 minutes. Now allow the baked loaf to cool down for 10 mins. Then slice it into biscotti-sized thick bars. Reduce temperature to 300°F.Place the biscotti, cut side down, on the baking sheet. Bake 10 minutes, then turn the slices over, and bake for another 10 minutes or until golden brown. Remove from oven and let cool. Store in an airtight container. These biscottis are low in fats, and even the fat it contains is good for the heart, coming from olive oil. This recipe does not use any butter or margarine, and also eliminates the high-fat content found in egg yolks. The egg whites provide necessary protein, milk and olive oil impart softness, while nuts and cranberries provide healthy anti-oxidants, proteins and omega-3 fatty acids which all aid in keeping your heart healthy. So enjoy these delicious cookies without any guilt!!

Italian Vegetable Soup Carrot - 1 (julienne) Baby leek - 1 (julienne) Celery - 1 stick (julienne) Green cabbage - 1 cup (thinly sliced) Vegetable soup stock - 3 1/2 cups Bay leaf - 1 Cooked cannellini - 1 cup Either stars or shells soup pasta - 1/4 cup Salt and pepper - add to taste Diced green chives - to garnish Add bay leaf, and bring the soup stock to a boil. Add in carrots, leek, celery, soup pasta and reduce heat. Let it simmer for 5minutes. Add in the cabbage, cannellini, and simmer for another 5 minutes. Remove bay leaf. Add salt and pepper. Garnish with chives.

GOOD MORNING TEAM! I read your post last night Sarah Su and I was stumped on a challenge for myself. I finally figured it out and I'm going to add 30 minutes to my work out! I'm still not sure on my reward, but if I manage to stick to it, the biggest reward to me would be losing another few pounds!

2nd Day of Diet
I'm with you, I despise eggs, but I have learned through this diet that the egg whites are ok as long as you hide it. I add onions or try the fake fried rice recipe. You would be suprised how one or even two egg whites blend in with everything else. Just keep mixing the stuff up and you wont know what is egg or veggie!
