Questions to all other low-carb dieters...
I think a lot of folks think low-carbing is all steak and cream and butter, and they look at what's not allowed on induction and wrongfully assume that you're supposed to eat like that forever. They don't realize that to follow the diet correctly you have to eat certain amounts of vegetables each day, and add back in other veggies and fruits and legumes and whole grains at a pace your body will accept. I eat more vegetables now than I ever did when I tried to restrict calories or eat low fat, and I'm rarely hungry (unless it's PMS, but that's a whole different story!). I'm always seeing healthy eating articles in women's magazines dismiss Atkins and other "diets that don't allow eating fruit" and the like, because it's just blatantly [i]not factual[/i]. Anyone who tries to tell me cutting refined sugar and white flour and empty calories from my diet is bad for me, well... whatever. :) Coulda fooled me - I sure feel a billion times better!

NO SUGAR HONEY
I get mine at Wal-Mart. I mix a little bit with some peanut butter when I need a sweet fix, and it is soooo good. I can't tell it's not real honey! (Could be because I haven't had sugar in forever, though!)

Non-Atkins people rating recipes
I guess I wish that if I searched for Atkins recipes, it would give me recipes their authors rated as Atkins, instead of stuff it assumes would be appropriate.

I guess maybe it's because Fatsecret brings up any recipes it thinks you'll be interested in, regardless of diet. Still, I don't care that my recipes aren't right for the fat flush diet! ;) They aren't supposed to be!

So, I've posted a couple of Atkins recipes, and I see that people who are on other diets have commented and told everyone just why that recipe isn't good for their particular diet. What's the point? What gives?

What is your reward?
I'm going to get a tattoo. I don't know what yet - I've been thinking about it for years. But I want to be thin before I get it so I won't feel weird showing it off (it'll have to be in an easily-hidden place because I work in an office at the moment). I'm on the lookout for the perfect idea.

I second the stuffed mushrooms, Jeansie. I love making them with cream cheese and bacon.... oh man, my mouth is watering now. I like making a low carb pumpkin cheesecake for family gatherings.

Can you afford to be skinny?
I've been doing induction without the help of shakes/bars/etc. I used them my first time around on Atkins when I was a dorm-living college kid who didn't have a kitchen! I pick up the slack by prepping for during-the-week meals on the weekend. It went extremely well this week - I hope that with work, school and all the papers I have to write this semester I still have time to do that. It's cheaper... because I plan my meals, I buy only the amount of groceries I need for the week, so nothing goes bad and I'm not wasting money! It's still expensive, though. Meat and cheese and fresh veggies... it's ridiculous that you can eat Cheetos and Twinkies for much less money. Grr.

How many carbs?![/quote] You know, I printed the recipe out and it's at home, and for the life of me I can't remember where I found it in the first place! I don't remember the carb count, either. I'll post it when I get the chance. It was absolutely delicious and very simple and easy to make.

Snack Snack Snack
I took some time on the weekend to make some scramble muffins that I froze/refrigerated and bring to work with me for snacks. You can put anything you like in them - sausage, bacon, bell peppers, onions, etc. Just pre-cook the meat and put equal amounts in muffin tins, then pour a mixture of eggs and a little heavy cream into each, then top with cheese and bake until they're puffy. I just had one :) Another thing you can do if you have time to prep is cheese chips and pepperoni chips. I spray a little nonstick spray on a plate, scatter cheddar cheese in a thin layer across it, then microwave it a few minutes until the cheese is crispy (it will still be a little malleable when you remove it from the plate - I stick mine on a paper towel to cool off and crisp up). It seriously tastes just like a cheez-it. And you can eat them with dip like regular chips. You can do the same thing with pepperonis - just microwave them til they're crispy. Another good snack is the ham and cheese rollup (or whatever lunch meat you prefer). Dip it in mayo or mustard if you want. This works with any cheese. Cream cheese is especially yummy with ham.
